This sheet was designed to assist with tracking the movement of wines from the cellar to the bar.
This sheet is particularly useful when your bar is generating variances. It may be that all wines are not being charged for, or that stock is actually being removed from the stores and not making it to the bar. Use this sheet like a Bin Card in your cellar. Keep hung up near the door and keep a pen hanging from the clipboard (no pen means excuses for not filling out the sheet...)
By insisting that this sheet is filled out daily as well as restricting access to the cellar to a limited number of staff, you will soon be able to narrow any variances down to an area (cellar or bar) and to a certain number of staff.
